Method
 

  1. Heat olive oil in a skillet over medium heat. Sauté chopped spinach for 2-3 minutes until wilted. Transfer to a bowl and mix with feta, mozzarella, garlic powder, oregano, black pepper, and sun-dried tomatoes if using.
  2. Place a tortilla in the skillet, spoon filling onto one half, fold the tortilla, and press down to seal. Repeat with remaining tortillas.
  3. Cook each quesadilla for 3-4 minutes on each side until golden brown and cheese is melted. Let cool for a minute before slicing.
