  • 1 cup whole milk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup unsweetened coconut milk
  • 1 cup powdered sugar
  • 1 teaspoon coconut extract

Method
 

  1. Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes. Add eggs one at a time, mixing well after each addition.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the butter mixture, alternating with the milk. Stir in vanilla and shredded coconut until well combined.
  4. Divide the batter evenly between the prepared pans and bake for 25-30 minutes. Check for doneness with a toothpick.
  5. Allow cakes to cool in pans for 10 minutes before transferring to a wire rack to cool completely.
  6. For the frosting, mix powdered sugar, coconut milk, and coconut extract until smooth and creamy.
  7. Once cooled, assemble the cake by placing one layer on a serving plate, spreading frosting on top, and adding the second layer. Frost the top and sides, and sprinkle additional shredded coconut on top.
