Chicken Bomb Mixture
  • 2 cups shredded cooked chicken Use rotisserie chicken for convenience.
  • 1 cup cream cheese, softened Ensure it's at room temperature for easy mixing.
  • 1 cup shredded Parmesan cheese
  • 1 cup almond flour Keeps the dish gluten-free.
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup fresh parsley, chopped (optional) For garnish.
  • 0.5 cup marinara sauce (for dipping)

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded cooked chicken with the softened cream cheese.
  3. Add the shredded Parmesan cheese, almond flour, and eggs to the chicken mixture. Sprinkle in the garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix everything together until well combined.
  4. Using your hands, take a portion of the mixture and form it into small balls, about 1.5 inches in diameter. Place each ball on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes until golden brown and cooked through. Let them cool for a few minutes before serving.
