Ingredients
  

Chicken and Pineapple
  • 2 cups cooked chicken, shredded
  • 1 cup fresh pineapple, diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup red cabbage, shredded
  • 1/2 cup cilantro, chopped
  • 1 lime, cut into wedges
  • 1 avocado, sliced (optional)

Method
 

  1. Marinate the chicken with chili powder, cumin, garlic powder, onion powder, salt, and pepper for 15 minutes.
  2. Prepare the pineapple salsa by dicing fresh pineapple and optionally adding lime juice.
  3. Heat olive oil in a skillet over medium heat, add marinated chicken, and cook for 5-7 minutes until heated through.
  4. Warm corn tortillas, assemble tacos with chicken and pineapple mixture, and top with red cabbage and cilantro.
