  1. Heat vegetable oil in a large pot over medium heat. Add ground pork and cook for 5-7 minutes until browned. Stir in minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  2. Pour in chicken broth and water, bringing the mixture to a boil. Add frozen potstickers and sliced mushrooms, then reduce heat to a simmer and cook for 5 minutes.
  3. Add chopped bok choy and shredded carrots, cooking for another 3-4 minutes until vegetables are tender.
  4. Stir in soy sauce and sesame oil, seasoning with salt and pepper to taste. Serve hot, garnished with sliced green onions.
