Ingredients
  

Vegetables
  • 2 cups cauliflower florets
  • 2 cups broccoli florets
  • 1 cup carrots, sliced
  • 1 cup Brussels sprouts, halved
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Method
 

  1. Wash and cut the vegetables into bite-sized pieces. Blanch them in boiling salted water for 3-4 minutes, then drain.
  2. In a saucepan, heat olive oil and sauté minced garlic for 1-2 minutes. Add heavy cream, thyme, salt, pepper, and nutmeg, and simmer for 3-4 minutes. Stir in cheddar cheese until melted.
  3. Combine blanched vegetables with the creamy sauce in a baking dish. Top with Parmesan cheese and breadcrumbs.
  4. Preheat oven to 375°F. Bake for 25-30 minutes until golden and bubbly. Let cool for 5 minutes before serving.
