- Wash and cut the vegetables into bite-sized pieces. Blanch them in boiling salted water for 3-4 minutes, then drain.
- In a saucepan, heat olive oil and sauté minced garlic for 1-2 minutes. Add heavy cream, thyme, salt, pepper, and nutmeg, and simmer for 3-4 minutes. Stir in cheddar cheese until melted.
- Combine blanched vegetables with the creamy sauce in a baking dish. Top with Parmesan cheese and breadcrumbs.
- Preheat oven to 375°F. Bake for 25-30 minutes until golden and bubbly. Let cool for 5 minutes before serving.
