- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine hulled and halved strawberries with honey and balsamic vinegar. Toss gently to coat.
- Spread the coated strawberries on a baking sheet lined with parchment paper and roast for 15-20 minutes until soft and caramelized.
- Brush both sides of the bread slices with olive oil and toast in a skillet or grill for 2-3 minutes on each side until golden brown.
- Spread a generous layer of whipped ricotta on each slice of toasted bread and top with roasted strawberries. Garnish with fresh mint leaves if desired.
