Fresh Strawberries
  • 2 cups fresh strawberries hulled and halved
  • 1 tablespoon honey adds sweetness
  • 1 teaspoon balsamic vinegar enhances flavor
  • 1 cup ricotta cheese creamy base
  • 1 teaspoon vanilla extract adds aroma and flavor
  • 1/4 teaspoon salt balances sweetness
  • 4 slices crusty bread sourdough or ciabatta
  • 1 tablespoon olive oil for brushing bread
  • Fresh mint leaves optional garnish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine hulled and halved strawberries with honey and balsamic vinegar. Toss gently to coat.
  3. Spread the coated strawberries on a baking sheet lined with parchment paper and roast for 15-20 minutes until soft and caramelized.
  4. Brush both sides of the bread slices with olive oil and toast in a skillet or grill for 2-3 minutes on each side until golden brown.
  5. Spread a generous layer of whipped ricotta on each slice of toasted bread and top with roasted strawberries. Garnish with fresh mint leaves if desired.
