In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and cook for about 5-7 minutes until browned. Remove the sausage from the skillet and set aside.
In the same skillet, add the cubed sweet potatoes, chopped bell pepper, and onion. Cook for about 10 minutes, stirring occasionally until tender and slightly caramelized.
In a small bowl, whisk together the honey, soy sauce, ground ginger, black pepper, and red pepper flakes. Set aside.
Add the minced garlic to the skillet and cook for 1-2 minutes until fragrant. Pour the honey garlic sauce over the sweet potato mixture, stir well, and return the cooked sausage to the skillet. Cook for another 3-5 minutes.
