  • 1 pound smoked sausage, sliced
  • 1 pound sweet potatoes, peeled and cubed
  • 1 red bell pepper, chopped
  • 1 yellow onion, chopped
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Method
 

  1. Gather all your ingredients. Wash and peel the sweet potatoes, then cut them into small cubes. Chop the red bell pepper and yellow onion into bite-sized pieces. Mince the garlic cloves.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and cook for about 5-7 minutes until browned. Remove the sausage from the skillet and set aside.
  3. In the same skillet, add the cubed sweet potatoes, chopped bell pepper, and onion. Cook for about 10 minutes, stirring occasionally until tender and slightly caramelized.
  4. In a small bowl, whisk together the honey, soy sauce, ground ginger, black pepper, and red pepper flakes. Set aside.
  5. Add the minced garlic to the skillet and cook for 1-2 minutes until fragrant. Pour the honey garlic sauce over the sweet potato mixture, stir well, and return the cooked sausage to the skillet. Cook for another 3-5 minutes.
