Wash the mixed salad greens thoroughly and dry them. Place the greens in large bowls.
Heat a skillet over medium-high heat. Add the ground beef, breaking it apart. Cook for 5-7 minutes until browned. Drain excess fat, then stir in garlic powder, onion powder, smoked paprika, salt, and pepper. Cook for an additional 2-3 minutes.
Add halved cherry tomatoes and diced cucumber to the bowl with the salad greens or arrange them on top of the beef.
Assemble the bowl by layering salad greens, cooked ground beef, cherry tomatoes, cucumber, and shredded cheddar cheese. Add sliced pickles on top.
Drizzle ranch dressing over the top of each bowl and serve immediately or chill for up to 30 minutes.
