Ingredients
  

Meat and Vegetables
  • 1 pound ground beef or lamb can substitute with turkey or plant-based alternative
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables frozen or fresh like peas and carrots
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 4 cups mashed potatoes can be homemade or store-bought
  • 1 cup shredded cheddar cheese

Method
 

  1. Heat a large skillet over medium heat. Add the ground beef or lamb and cook until browned, about 5-7 minutes. Drain excess fat.
  2. Add diced onion and minced garlic to the skillet. Sauté for about 3-4 minutes until onion is translucent. Stir in mixed vegetables, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Cook for an additional 5 minutes.
  3. If making mashed potatoes from scratch, boil peeled potatoes in salted water until tender, about 15-20 minutes. Drain and mash with butter, milk, salt, and pepper until creamy.
  4. Transfer the meat and vegetable mixture into a greased 9x13-inch baking dish. Spread evenly and spoon the mashed potatoes over the top, covering the meat completely.
  5. Sprinkle shredded cheddar cheese on top. Preheat oven to 400°F and bake for 25-30 minutes until cheese is melted and bubbly.
