Method
 

  1. Prepare the ingredients by cutting the beef into 1-inch cubes, chopping the onion, mincing the garlic, and halving the baby potatoes.
  2. Season the beef with salt and pepper, then brown in a skillet with olive oil for 5-7 minutes.
  3. Transfer the browned beef to the slow cooker, sauté the onion and garlic in the same skillet for 2-3 minutes, then add to the slow cooker.
  4. Layer the halved baby potatoes on top, then add beef broth, Worcestershire sauce, thyme, and rosemary. Stir gently and cover.
  5. Cook on low for 480 minutes or on high for 300 minutes until the beef is fork-tender.
  6. Garnish with freshly chopped parsley before serving.
