Prepare the chicken by shredding it into bite-sized pieces. If using raw chicken, cook it thoroughly before shredding.
Prepare the flatbreads by using store-bought or making your own from scratch.
In a large bowl, combine shredded chicken, mozzarella cheese, ranch dressing, diced red bell pepper, diced red onion, garlic powder, paprika, and cayenne pepper. Mix well.
Preheat the oven to 400°F. Place flatbreads on a baking sheet, brush with olive oil, and distribute the chicken mixture evenly over each flatbread.
Bake for 12-15 minutes until cheese is melted and edges are golden brown. Let cool for a few minutes before serving.
Garnish with fresh cilantro before serving.
