Ingredients
  

Corn Mixture
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup diced red bell pepper
  • 1/4 cup chopped green onions
  • 1 large egg
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper adjust to taste
  • Vegetable oil for frying

Method
 

  1. In a large mixing bowl, combine the corn kernels, all-purpose flour, cornmeal, shredded cheddar cheese, diced red bell pepper, and chopped green onions. Mix well.
  2. In a separate bowl, whisk together the egg, chili powder, cumin, garlic powder, salt, black pepper, and cayenne pepper. Pour this mixture into the corn mixture and stir until evenly mixed.
  3. Scoop out a generous amount of the corn mixture and shape it into small patties. Flatten them slightly.
  4. Heat about 1/2 inch of vegetable oil in a skillet over medium heat. Fry the corn bites for 3-4 minutes on each side until golden brown and crispy. Drain on paper towels.
