Ingredients

Red Onion
  • 1 large red onion Thinly sliced for the best texture and flavor absorption.
  • 1 cup apple cider vinegar Adds the tangy base for the pickling brine.
  • 1/2 cup honey The star ingredient that brings sweetness to the dish.
  • 1 teaspoon red pepper flakes For that spicy kick that makes these onions stand out.
  • 1 teaspoon salt Enhances the overall flavor of the pickled onions.
  • 1/2 teaspoon black pepper Adds a subtle warmth to the mix.
  • 1/2 teaspoon garlic powder For an extra layer of flavor.
  • 1/2 teaspoon mustard seeds (optional) These can add a nice crunch and flavor.
  • 1/2 teaspoon coriander seeds (optional) For a hint of citrusy flavor.

Equipment

  • Medium Saucepan
  • sharp knife
  • glass jar or container

Method

  1. Peel the outer skin off the onion and slice it thinly, about 1/8 inch thick. Place the onions in a clean glass jar.
  2. In a medium saucepan, combine apple cider vinegar, honey, red pepper flakes, salt, black pepper, and garlic powder. Heat over medium heat until honey dissolves, about 10 minutes. Remove from heat and let cool for 10 minutes.
  3. Pour the cooled vinegar mixture over the sliced red onions in the jar, ensuring all onions are submerged. Seal the jar tightly.
  4. Place the sealed jar in the refrigerator and let the onions marinate for at least 120 minutes, preferably overnight.
