Chicken
  • 2 large boneless, skinless chicken breasts about 1 pound total
  • 1 cup fresh spinach chopped
  • 1/2 cup cream cheese softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper for seasoning
  • 1 tablespoon olive oil for searing the chicken
  • 1/2 teaspoon paprika optional

Method
 

  1. Preheat the oven and prepare the chicken breasts by rinsing and slicing a pocket into each.
  2. In a bowl, mix chopped spinach, cream cheese, mozzarella, Parmesan, garlic, and Italian seasoning.
  3. Stuff the chicken breasts with the filling and secure with toothpicks if necessary.
  4. Sear the stuffed chicken in a skillet with olive oil for 3-4 minutes on each side, then bake in the oven until cooked through.
  5. Let the chicken rest for 5 minutes before slicing and serving.
