Method
 

  1. Gather all ingredients.
  2. In a mixing bowl, combine cream cheese, almond butter, erythritol, vanilla extract, and salt. Mix until smooth and creamy.
  3. Gently fold in the diced strawberries.
  4. Line a mini muffin tin with paper liners and spoon the mixture into each cup, filling them about three-quarters full.
  5. Place the muffin tin in the freezer and let chill for 1-2 hours until firm.
  6. Remove from the tin and store in an airtight container in the freezer.
