Ingredients
  

Ground Meat
  • 1 pound ground beef or turkey
  • 1 medium onion, diced
  • 1 medium green bell pepper, diced
  • 1 medium red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes
  • 1 can (15 ounces) tomato sauce
  • 4 cups beef or vegetable broth
  • 1 cup uncooked rice (white or brown)
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese (for topping)
  • Fresh parsley chopped (for garnish)

Method
 

  1. Gather all the ingredients and prepare the vegetables by dicing the onion and bell peppers, and mincing the garlic.
  2. In a large pot, heat oil over medium heat and cook the ground meat until browned, about 5 to 7.
  3. Add the diced onion, green bell pepper, red bell pepper, and minced garlic to the pot and sauté for about 5.
  4. Stir in the cooked ground meat, diced tomatoes, tomato sauce, broth, uncooked rice, Italian seasoning, salt, and black pepper. Mix well.
  5. Bring the mixture to a boil, then reduce heat to low, cover, and let it simmer for about 20 to 25.
  6. Check if the rice is tender, adjust seasoning if needed, and serve topped with shredded cheddar cheese and fresh parsley.
