Ingredients
  

Sweet Potatoes
  • 2 medium sweet potatoes peeled and diced
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon paprika
  • 0.5 cup diced onion
  • 1 cup diced bell pepper any color
  • 6 large eggs
  • 0.5 cup milk
  • 1 cup shredded cheddar cheese
  • 0.25 cup chopped fresh parsley optional

Method
 

  1. Preheat your oven to 375°F.
  2. In a large bowl, combine diced sweet potatoes with olive oil, salt, black pepper, and paprika. Toss to coat and spread in a greased 9x13-inch baking dish.
  3. Bake sweet potatoes for 20 minutes.
  4. In another bowl, whisk together eggs and milk until well combined.
  5. Stir in sautéed onions, bell peppers, and half of the shredded cheddar cheese into the egg mixture.
  6. Pour the egg mixture over the baked sweet potatoes and sprinkle the remaining cheddar cheese on top.
  7. Bake for an additional 25-30 minutes until eggs are set and top is golden brown.
  8. Let cool for 5-10 minutes before slicing.
