  • 1 can garbanzo beans 15 ounces, drained and rinsed
  • 1 can tuna 5 ounces, packed in water, drained
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Gather all your ingredients in one place.
  2. Open the can of tuna, drain the water, and flake it into smaller pieces.
  3. Rinse and drain the garbanzo beans under cold water.
  4. Chop the cherry tomatoes, cucumber, red onion, and parsley.
  5. In a large mixing bowl, combine the garbanzo beans, flaked tuna, halved cherry tomatoes, diced cucumber, chopped red onion, and parsley.
  6. In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper. Pour over the salad mixture and toss gently.
  7. Let the salad chill in the refrigerator for at least 30 minutes before serving.
