Method
 

  1. Gather all ingredients: pecans, sugar, butter, heavy cream, vanilla extract, and salt.
  2. Prepare your cooking area with a large skillet, medium saucepan, and a baking sheet lined with parchment paper.
  3. In a medium saucepan, combine sugar, butter, heavy cream, and salt. Stir gently.
  4. Place the saucepan over medium heat, stirring constantly until it boils. Once boiling, stop stirring and cook for 4-5 minutes until it reaches soft ball stage (235°F).
  5. Remove from heat, stir in vanilla extract, and fold in toasted pecans.
  6. Drop spoonfuls of the mixture onto the prepared baking sheet, leaving space between each scoop.
  7. Allow the pralines to cool completely at room temperature for about 30 minutes.
