  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup molasses
  • 1/4 cup gin
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C) and prepare four mini loaf pans by greasing them with butter or cooking spray and dusting with flour.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, ground ginger, ground cinnamon, ground nutmeg, and salt. Set aside.
  3. In a large mixing bowl, cream the softened unsalted butter and packed brown sugar together using an electric mixer for about 3-4 minutes until light and fluffy. Add the molasses and gin, mixing until well combined.
  4. Gradually add the flour mixture to the wet ingredients, stirring gently until just combined.
  5. Add the eggs, buttermilk, and vanilla extract to the batter, mixing until smooth.
  6. Divide the batter evenly among the prepared mini loaf pans, filling each about two-thirds full.
  7. Bake for 25-30 minutes, checking for doneness with a toothpick.
  8. Allow the loaves to cool in the pans for about 10 minutes before transferring to a wire rack to cool completely.
