Ingredients
  

Chicken
  • 2 large boneless, skinless chicken breasts about 1 pound
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chipotle ranch dressing
  • 4 large flour tortillas
  • 1 cup cooked rice white or brown
  • 1 cup black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 medium tomato diced
  • 1/4 cup fresh cilantro chopped
  • 1 serving lime wedges for serving

Method
 

  1. Marinate the chicken by mixing olive oil, garlic powder, onion powder, smoked paprika, ground cumin, salt, and black pepper. Rub this mixture on the chicken breasts and let marinate for at least 15 minutes.
  2. Preheat the grill or grill pan over medium-high heat. Grill the marinated chicken breasts for 6-7 minutes on each side until the internal temperature reaches 165°F. Let rest for 5 minutes before slicing.
  3. Prepare the zesty chipotle ranch sauce by mixing the chipotle ranch dressing with lime juice if desired. Set aside.
  4. Assemble the burrito by placing rice and beans in the center of a tortilla, followed by sliced grilled chicken, cheese, lettuce, tomato, and cilantro. Roll tightly.
  5. Grill the assembled burritos for 2-3 minutes on each side for a crispy finish, if desired.
