- In a large bowl, whisk together the olive oil, fresh lemon juice, lemon zest, minced garlic, oregano, thyme, salt, black pepper, and red pepper flakes. Add the chicken and coat well. Cover and marinate in the refrigerator for at least 30 minutes.
- Prepare the zesty lemon sauce by reserving some of the marinade before adding the chicken. This reserved marinade can be used as a sauce later.
- Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side until the internal temperature reaches 165°F.
- Let the chicken rest for about 5 minutes, then slice and garnish with freshly chopped parsley.
