  • 1 cup dried green or brown lentils Rinsed and drained
  • 1 medium onion Diced
  • 2 cloves garlic Minced
  • 2 medium carrots Diced
  • 2 stalks celery Diced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon turmeric
  • 6 cups vegetable broth Base for the soup
  • 1 medium lemon Juiced and zested
  • to taste salt and pepper For seasoning
  • 2 tablespoons olive oil For sautéing
  • to taste fresh parsley Chopped, for garnish

Method
 

  1. Gather all your ingredients and ensure they are ready for cooking.
  2. Dice the onion, carrots, and celery. Mince the garlic.
  3. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for 5-7 minutes until soft. Stir in the minced garlic and spices, cooking for an additional 1-2 minutes.
  4. Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat to low and simmer.
  5. After 25-30 minutes, check the lentils for tenderness. Squeeze in the lemon juice and add the zest. Season with salt and pepper to taste.
  6. Let the soup simmer for a few more minutes, then serve hot, garnished with fresh parsley.
